Garlic Butter Grass-fed Steak Bites Recipe

We can’t get enough of this quick and easy appetizer from Spoon Fork Bacon. Made with New Zealand grass-fed ribeye steaks, these tender and juicy steak bites pair perfectly with a creamy horseradish sauce, or any dipping sauce of your choice.
Ingredients:
For the steak bites:
- 2 lb. New Zealand Grass-fed ribeye steak, cubed into 1-inch pieces (Tip: Look for the Taste Pure Nature logo)
- 3 minced garlic cloves, divided
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- 3 tablespoons olive oil, divided
- 3 tablespoons unsalted butter
- 1 1/2 tablespoons thinly sliced chives
For the sauce:
- 1/2 cup sour cream
- 2 tablespoons mayonnaise
- 2 1/2 tablespoons prepared horseradish
- 2 teaspoons Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Directions:
For the sauce:
- 1. In a medium mixing bowl, add all ingredients and whisk together until fully combined. Add more salt and pepper as needed.
- 2. Cover and refrigerate until ready to use.
For the steak bites:
- 3. In a large mixing bowl, combine cubed steak, 2 minced garlic cloves, salt, pepper, and 1 1/2 tablespoons oil and mix together until steak bites are evenly coated. Set aside and allow steak to marinate for 20 minutes.
- 4. Place a large (12 inch) pan over medium-high heat and add remaining oil.
- 5. Once oil is hot, add steak bites and sear on each side, about 30 seconds. Continue to cook steak bites for about 6 minutes.
- 6. Push steak bites to one side of the pan and melt the butter. Add garlic, tilt the pan towards you and begin spooning the melted garlic butter over the steak bites. Do this for about 1 minute.
- 7. Remove pan from heat and stir together.
To serve:
- 8. Transfer steak bites to a platter, top with a drizzle of garlic butter and sliced chives. Serve with horseradish sauce on the side.
