Szechuan Beef Recipe

Takeout but homemade? Yes, please! This easy Szechuan Beef recipe from Spoon Fork Bacon uses New Zealand grass-fed beef, takes only 30 minutes to make and results in a tender, flavor packed dish. It’s so delicious, you may just make it twice in one a week!
Ingredients:
For the Beef:
- 1.5 lb. New Zealand grass-fed flank steak, sliced 1/8-inch thick against the grain (Tip: look for the Taste Pure Nature Logo)
- 1 egg, beaten
- 1/2 teaspoon salt
- 2 tablespoons cornstarch
- 1/4 cup vegetable oil, divided
- 1/4 small yellow onion, thinly sliced
- 1 red bell pepper, seeded and thinly sliced
- 5 dried Chinese chile peppers
- 2 teaspoons garlic, minced
- 2 garlic cloves, minced
For the Sauce:
- 1/2 cup water
- 2 1/2 tablespoons rice wine vinegar
- 2 1/2 tablespoons soy sauce
- 2 tablespoons Shaoxing wine
- 2 tablespoons sugar
- 1 1/2 tablespoons spicy fermented bean paste
- 1 tablespoon cornstarch
To Serve:
- Prepared rice
- 1 1/2 teaspoon sesame seeds, toasted
Directions:
For the Sauce:
- 1. In a mixing bowl, whisk together the water, rice wine vinegar, soy sauce, Shaoxing wine, bean paste, sugar and cornstarch. Set aside.
For the Beef:
- 2. In a mixing bowl, combine sliced steak, egg, and salt until beef is fully coated. Allow mixture to sit for 10 minutes.
- 3. Drain excess egg from beef. Add cornstarch to the mixing bowl and toss until evenly coated.
- 4. In a large skillet, heat 2 tablespoons vegetable oil over medium-high heat. Once skillet is hot, sear beef for 3 minutes on one side. Flip and sear an additional 2 minutes. Transfer to plate.
- 5. Add remaining oil to the skillet and increase to high heat. Sauté the onion, bell pepper, and chile peppers for 2-3 minutes.
- 6. Stir in ginger and garlic until evenly distributed. Lower heat to medium-high and stir in the sauce. Allow sauce to thicken, about 1 minute.
- 7. Add beef back into skillet and toss until evenly coated. Remove from heat.
- 8. Serve over rice and top with toasted sesame seeds.
