New Zealand Grass-fed Beef Queso Dip Recipe

This easy and flavorful grass-fed beef queso dip from Spoon Fork Bacon is great for feeding a crowd at your next gathering or game day celebration.
Ingredients:
For the Beef:
- 1/2 lb. New Zealand grass-fed ground beef (Tip: Look for the Taste Pure Nature logo)
- 2 tablespoons olive oil
- Salt
- Pepper
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 lime, juiced (optional)
- 1 tablespoon tomato paste
- 2 tablespoons beef stock
For the Dip:
- 2 tablespoons unsalted butter
- 1 garlic clove, minced
- 1 tomato, seeded and diced
- 1 5oz can diced green chiles, drained
- 1 teaspoon cumin
- 1 tablespoon cornstarch
- 5 oz evaporated milk
- 8 oz cheddar cheese, shredded
To Assemble and Serve:
- 3 tablespoons cilantro, minced
- Salt and pepper, to taste
- Tortilla chips
Directions:
For the Beef:
- 1. In a skillet, heat oil over medium heat.
- 2. Add beef to skillet and brown, breaking apart with a wooden spoon. Season with salt and pepper.
- 3. Add cumin, garlic powder, chili powder and lime juice (if using) and stir for 1 minute.
- 4. Stir in tomato paste and stock until beef is evenly coated.
- 5. Lower heat to medium low and simmer for 5 minutes, stirring occasionally. Set aside and slightly cool.
For the Dip:
- 6. Place a small pot over medium heat and melt butter. Add garlic and saute for 1 minute. Then, add tomatoes, green chiles and cumin and saute for 2 to 3 minutes.
- 7. Mix in cornstarch, followed by evaporated milk and stir until mixture is smooth.
- 8. Lower heat to low and while stirring continuously, add cheese in small handfuls until fully melted and mixture is smooth. Simmer for 2 to 3 minutes.
- 9. Fold seasoned beef into the queso and simmer for 1 to 2 minutes. Remove dip from heat.
To Assemble and Serve:
- 10. Stir in cilantro and season with salt and pepper.
- 11. Serve with tortilla chips.
