Barbecued New Zealand Grass-fed Flank Steak Recipe

Whether you’re firing up the grill for a casual summer BBQ or celebrating a special occasion, this recipe for a flavorful, juicy barbecued New Zealand grass-fed flank steak is sure to impress. Don’t have a grill? Just use a cast iron skillet on the stove.
Tip: Cook the steak in the cast iron skillet over wood or coals for extra flavor.
Ingredients:
- 1 1/2 lb. New Zealand grass-fed flank steak (Tip: look for the Taste Pure Nature Logo)
- 2 tablespoons olive oil, divided
- Sea salt
- Black pepper
- 2 cloves garlic, minced
- 2 tablespoons butter
- Fresh thyme or rosemary
Directions:
- 1. One hour prior to grilling, remove steak from refrigerator and bring to room temperature.
- 2. Once steak has reached room temperature, pat dry and rub all sides with 1 tablespoon olive oil. Season with salt and pepper.
- 3. When ready to cook, heat grill to high.
- 4. Place a cast iron skillet on the grill over direct heat and add garlic, butter and thyme. Cook for 3-5 minutes, or until butter begins to brown.
- 5. To skillet, add remaining olive oil, then steak. Cook 2 minutes per side.
- 6. Remove skillet from direct heat and continue cooking, covered, until steak reaches your desired level of doneness (about 10 minutes for medium rare).
- 7. Remove skillet from BBQ and rest steak on a cutting board for 5 minutes before slicing.
- 8. To serve, plate steak and drizzle pan juice on top.
