  • 2 tablespoons olive oil, divided
  • Sea salt
  • Black pepper
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • Fresh thyme or rosemary

  • 1. One hour prior to grilling, remove steak from refrigerator and bring to room temperature.
  • 2. Once steak has reached room temperature, pat dry and rub all sides with 1 tablespoon olive oil. Season with salt and pepper.
  • 3. When ready to cook, heat grill to high.
  • 4. Place a cast iron skillet on the grill over direct heat and add garlic, butter and thyme. Cook for 3-5 minutes, or until butter begins to brown.
  • 5. To skillet, add remaining olive oil, then steak. Cook 2 minutes per side.
  • 6. Remove skillet from direct heat and continue cooking, covered, until steak reaches your desired level of doneness (about 10 minutes for medium rare).
  • 7. Remove skillet from BBQ and rest steak on a cutting board for 5 minutes before slicing.
  • 8. To serve, plate steak and drizzle pan juice on top.
