- 1/2 yellow onion, finely diced
- 1 tablespoon olive oil
- 1/2 teaspoon cumin
- 1/2 teaspoon coriander
- 1/2 teaspoon paprika
- 1/2 teaspoon cinnamon
- 1/2 teaspoon black pepper
- 1 teaspoon salt
For the Hummus:
- 15 oz. can garbanzo beans, drained and peeled
- 1/2 cup tahini
- 2-3 tablespoons freshly squeezed lemon juice
- 2-3 small garlic cloves
- 3/4 teaspoon kosher salt
To Assemble & Serve:
- 1 1/2 cups cherry tomatoes, halved
- 4 Persian cucumbers, diced
- 1/4 medium red onion, diced
- 1/2 lemon, juiced
- 1/2 cup feta, crumbled
- Salt and pepper, to taste
- Sumac or paprika, to taste
- 1-2 tablespoons herbs, finely chopped (parsley, mint, chives, etc.)
- Olive oil
- Pita chips
Directions:
For the Lamb:
- 1. In a medium cast-iron skillet, heat oil over medium-high heat.
- 2. Add onion and cook until translucent.
- 3. Increase heat to high and add ground lamb and spices. Cook, breaking up lamb into small pieces, until browned and cooked through (5-6 minutes). Set aside.
For the Hummus:
- 4. In a food processor, blend chickpeas for 1 minute until powdery clumps form. Scrape down the sides and blend again until everything is the same consistency.
- 5. Add tahini, lemon juice, garlic and salt and blend until smooth.
- 6. With the machine running, drizzle in 1 tablespoon of water at a time, until you get a very smooth, light and creamy mixture. Taste and adjust seasonings, adding more salt, garlic or lemon juice, if needed.
To Assemble & Serve:
- 7. To assemble, spread hummus on a platter and top with ground lamb, tomatoes, cucumbers, onion, and feta. Drizzle with olive oil and lemon juice, and season with sumac, salt and pepper.
- 8. Serve hummus with pita chips.
