Hummus with Grass-fed Lamb Recipe

Loaded hummus anyone? Check out this recipe from What’s Gaby Cooking featuring New Zealand grass-fed ground lamb with smooth, freshly made hummus and topped with feta and vibrant seasonal veggies.  

Ingredients:

For the Lamb:

  • 1/2 lb. New Zealand grass-fed ground lamb (Tip: Look for the Taste Pure Nature logo) 
  • 1/2 yellow onion, finely diced
  • 1 tablespoon olive oil
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt

For the Hummus:

  • 15 oz. can garbanzo beans, drained and peeled
  • 1/2 cup tahini
  • 2-3 tablespoons freshly squeezed lemon juice
  • 2-3 small garlic cloves
  • 3/4 teaspoon kosher salt

To Assemble & Serve:

  • 1 1/2 cups cherry tomatoes, halved
  • 4 Persian cucumbers, diced
  • 1/4 medium red onion, diced
  • 1/2 lemon, juiced
  • 1/2 cup feta, crumbled
  • Salt and pepper, to taste
  • Sumac or paprika, to taste
  • 1-2 tablespoons herbs, finely chopped (parsley, mint, chives, etc.)
  • Olive oil
  • Pita chips

Directions:

For the Lamb:

  • 1. In a medium cast-iron skillet, heat oil over medium-high heat.
  • 2. Add onion and cook until translucent.
  • 3. Increase heat to high and add ground lamb and spices. Cook, breaking up lamb into small pieces, until browned and cooked through (5-6 minutes). Set aside.

For the Hummus:

  • 4. In a food processor, blend chickpeas for 1 minute until powdery clumps form. Scrape down the sides and blend again until everything is the same consistency.
  • 5. Add tahini, lemon juice, garlic and salt and blend until smooth.
  • 6. With the machine running, drizzle in 1 tablespoon of water at a time, until you get a very smooth, light and creamy mixture. Taste and adjust seasonings, adding more salt, garlic or lemon juice, if needed.

To Assemble & Serve:

  • 7. To assemble, spread hummus on a platter and top with ground lamb, tomatoes, cucumbers, onion, and feta. Drizzle with olive oil and lemon juice, and season with sumac, salt and pepper.
  • 8. Serve hummus with pita chips.
