New Zealand Grass-Fed Beef Nachos with Avocado Salsa Recipe

Who doesn’t love nachos? These nachos get a flavor upgrade with New Zealand grass-fed beef. If you can’t find the perfect avocados, switch them out for a tomato salsa or spicy jalapenos.

Ingredients:

For the Nachos:

  • 1 - 1 1/3 lbs. New Zealand grass-fed ground beef (Tip: Look for the Taste Pure Nature Logo)
  • 1 onion, finely chopped
  • 3 cloves garlic, crushed
  • 2 teaspoons paprika
  • 1 teaspoon ground cumin
  • ¼ teaspoon chili powder (optional)
  • 14 oz can chopped tomatoes
  • 14 oz red kidney beans, drained
  • 2 cups beef stock
  • 1 cup roasted red peppers
  • 1 teaspoon brown sugar
  • Salt and pepper, to taste
  • 3-4 tortillas

For the avocado salsa:

  • 1 large ripe avocado, diced
  • 1 cucumber, deseeded, diced
  • 1/2 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper, to taste

To Serve:

  • Sour cream
  • Fresh cilantro

Directions:

For the Nachos:

  • 1. Preheat the oven to 350°F.
  • 2. Heat a little oil in a large frying pan over a high heat. Fry the ground beef in two batches to brown, drain off the fat and set the beef aside in a bowl.
  • 3. Wipe the pan clean, reduce the heat to medium and add a dash of oil.
  • 4. Add the onion and garlic and cook, stirring for 5 minutes until soft.
  • 5. Add the drained beef back to the pan along with the spices, tomatoes, beans, stock, red pepper and brown sugar.
  • 6. Simmer until reduced to a thick sauce (around 20-30 minutes). Taste and season with salt and pepper as required.
  • 7. Brush the tortillas lightly with oil, sprinkle with a pinch of salt and place on oven trays.
  • 8. Bake in the oven for about 10 minutes or until crisp, turning over once.
  • 9. Break tortillas into big chips for serving.

For the Salsa:

  • 10. Combine the ingredients gently in a bowl just before serving and season with salt and pepper.

To Serve:

  • 11. Place chips onto plates and top with the beef. Add a spoonful of salsa, a dollop of sour cream and fresh cilantro.
