Beef Tamale Casserole Recipe

This family-friendly, tamale-inspired casserole is our go-to dish for a flavorful and easy dinner. Packed with grass-fed beefbeans and corn, and topped with a cheesy cornmeal crust, we guarantee this recipe will hit the spot!

Ingredients:

  • 1 lb. New Zealand grass-fed ground beef (Tip: Look for the Taste Pure Nature Logo)
  • 4 cups water
  • 1 cup yellow cornmeal
  • 1/2 teaspoon salt
  • 1 cup chopped onion
  • 1 green bell pepper, chopped
  • 1 tablespoon minced garlic
  • 1 tablespoon chili powder
  • 1 tablespoon oregano
  • 1/2 teaspoon salt
  • 14 oz can crushed tomatoes
  • 14 oz can corn, drained
  • 14 oz can kidney beans, drained and rinsed
  • 2 cups cheddar cheese, grated
  • Olive oil spray

To serve:

  • Fresh Cilantro

Directions:

  • 1. Preheat the oven to 350° F.
  • 2. In a saucepan, add the water, salt and cornmeal and bring to a simmer. Cook until the cornmeal begins to thicken. Set aside.
  • 3. In a large skillet or saute pan, add the onion, green pepper and garlic. Stir well. Add the chili powder, oregano, salt, ground beef, crushed tomatoes, corn and drained kidney beans and stir well to combine.
  • 4. Transfer the mixture to an oiled 9x13 baking dish and spread out evenly.
  • 5. Spread the cornmeal mixture over the meat. Add the grated cheddar and bake for 40 minutes or until casserole is bubbling around the edges.

To Serve:

  • 6. Garnish with fresh cilantro and serve immediately.
