The trick to a no-mess, no-fuss Beef Wellington is all in some handy plastic wrap. The beef tenderloin is briefly seared before being encased in pastry and a savory mushroom and prosciutto filling, cooking to a delicate medium-rare as it bakes. Golden pastry and juicy, perfectly cooked beef make for a real showstopper.

PRIME RIB WITH HORSERADISH CREAM

Prime rib is a wonderful way to showcase some delicious New Zealand grass-fed and pasture raised beef. Prime rib doesn’t refer to prime-grade beef, but actually refers to the part of the cow it comes from: the primal rib. Prime rib, often called standing rib roasts, can be as small as 2 ribs and go all the way up 8 ribs wide. A large beef roast like prime rib is a great idea for feeding a crowd.
