Crispy Chicken Fried Steak with Country Gravy Recipe

This crispy chicken fried grass-fed steak with country gravy recipe from Spoon Fork Bacon is a delicious comfort food dishWe like to serve it over mashed potatoes and corn.  

Ingredients:

For the Chicken Fried Steak:

  • 2 6 oz New Zealand grass-fed flat iron steaks (Tip: look for the Taste Pure Nature Logo)
  • 1 cup flour
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons smoked paprika
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 eggs
  • 1 cup buttermilk
  • 2/3 cup cornstarch
  • 1 quart vegetable oil

For the Country Gravy:

  • 2 tablespoons unsalted butter
  • 3 tablespoons flour
  • 1 1/2 teaspoons Dijon mustard
  • 1 1/2 cup whole milk
  • Salt
  • Pepper

Directions:

For the Chicken Fried Steak:

  • 1. Place each steak between two sheets of plastic wrap. Pound steaks with a meat mallet until 1/2-inch thick. Discard plastic wrap and season steaks with salt and pepper.
  • 2. In a bowl, stir together flour, garlic powder, onion powder, smoked paprika and salt. Drizzle 1/4 cup buttermilk over flour mixture and stir together.
  • 3. In another dish whisk together eggs and remaining buttermilk.
  • 4. In a third dish add cornstarch.
  • 5. Preheat oil in a large pan to 350˚ F.
  • 6. Working one steak at a time, dredge steak in cornstarch. Shake off excess. Dip steak into egg mixture until fully coated. Allow excess to drip off. Dredge steak into flour mixture until fully coated. Shake off excess. Place dredged steak onto a baking sheet with a cooling rack. Repeat with the second steak.
  • 7. Fry steaks for 3 to 4 minutes on each side until coating is golden brown and steaks are cooked through.
  • 8. Remove steaks from the pan and drain on the cooling rack. Season with salt and pepper.

For the Country Gravy:

  • 9. Melt butter in a saucepan over medium heat. Add 1 tablespoon of frying oil. Whisk in flour and cook for about 1 minute.
  • 10. Whisk mustard and milk into roux and continue to whisk until the mixture is smooth. Lower heat to medium-low, season with salt and pepper and simmer until gravy thickens, whisking occasionally, 4 to 5 minutes.

To Serve:

  • 11. Transfer steaks to a platter and top with gravy. Serve with mashed potatoes and corn.
