Beef Skewers with Garlic Bourbon Sauce Recipe

Peaches 2 Peaches, in partnership with feedfeed, created these New Zealand grass-fed beef tenderloin and mushroom skewers topped with a zesty garlic bourbon sauce.
Ingredients:
For the Skewers:
- 4 6 oz New Zealand grass-fed beef tenderloins, cut into 1-inch cubes (Tip: Look for the Taste Pure Nature Logo)
- 15 baby bella mushrooms, halved
- Kosher salt
- Black pepper
- 2 tablespoons olive oil
For the Sauce:
- 1 cup soy sauce
- 1/3 cup brown sugar
- 1 tablespoon tomato paste
- 3 cloves garlic, minced
- 2 tablespoons onion, chopped
- 3 tablespoons cilantro, chopped
- 2 tablespoons bourbon
To Serve:
- 2 lime wedges
Directions:
For the Sauce:
- 1. Place soy sauce, brown sugar, tomato paste, garlic, onion, cilantro and bourbon in a saucepan over medium heat. Cook 10-15 minutes, or until sauce has thickened and reduced.
- 2. Reserve half of the sauce for serving.
For the Skewers:
- 3. Preheat a gas grill to medium heat or heat a grill pan on a stovetop over medium heat.
- 4. While the grill heats, place the tenderloin cubes into a mixing bowl and season with salt and pepper. Add olive oil and mix until all pieces are well coated.
- 5. Divide the seasoned tenderloin equally between metal skewers, incorporating mushrooms in between pieces of meat.
- 6. Place the prepared skewers on the hot grill and brush with the remaining half of the sauce. Grill until the skewers achieve your desired level of doneness (2-3 minutes per side for medium rare).
To serve:
- 7. Place skewers on a platter with remaining sauce. Squeeze the juice from 2 lime wedges over the skewers and serve.
