Middle Eastern Grass-fed Beef Meatball Wrap Recipe

Bring some flavor to your dining table with these Middle Eastern inspired wraps made with hummus, creamy tzatziki and New Zealand grass-fed beef meatballs.
Tip: This recipe uses pre-made grass-fed beef meatballs as a time saver, but you can also make them from scratch, using your favorite recipe.
Ingredients:
For the Meatballs:
- 1 package New Zealand grass-fed beef meatballs, about 1 1/4 lb. (Tip: Look for the Taste Pure Nature logo)
- 2 celery stalks, diced
- 1 red onion, finely sliced
- 1 12 oz package edamame, cooked
- 1/2 cup fresh cilantro, roughly chopped
- 1 tablespoon olive oil
- Salt
- Black pepper
For the Tzatziki:
- 1/2 cucumber, skins and seeds removed
- 3/4 cup Greek yogurt
- 2 garlic cloves, minced
- 1 handful fresh mint, chopped
- Salt
- Black pepper
To Serve:
- 6 flatbreads
- Hummus
- 1 tablespoon olive oil
- 1 tablespoon dukkah spice blend
Directions:
For the Meatballs:
- 1. Over medium heat, pan fry the meatballs according to package instructions.
- 2. In a medium bowl, combine celery, red onion, edamame and cilantro.
- 3. Incorporate the cooked meatballs into the salad mixture and top with olive oil, salt and pepper.
For the Tzatziki:
- 4. Grate the cucumber and place in a paper towel to drain the liquid. Gently squeeze out over a sink to release excess liquid, if necessary.
- 5. In a small bowl, combine the grated cucumber, Greek yogurt, garlic, mint, salt and pepper. Cover and refrigerate until ready to serve.
To Serve:
- 6. Transfer the hummus to a small bowl and top with olive oil and dukkah.
- 7. Warm the flatbread according to package instructions.
- 8. Spread the hummus mixture onto the flatbread, then top with the meatball and salad mixture. Top with a generous serving of tzatziki and serve immediately.
