Grilled Steak Gyros Recipe

What do you get when you combine New Zealand grass-fed flank steak with Mediterranean flavors? This delicious gyro recipe from A Cozy Kitchen! The flank steak is so naturally flavorful that you only need a little salt and oil to prepare it before adding to a warmed pita with a creamy tzatziki sauce and your favorite toppings.

Tip: You can make the tzatziki sauce up to three days ahead.

Ingredients:

  • 1 1/2 lb. New Zealand grass-fed flank steak (Tip: look for the Taste Pure Nature Logo)
  • Kosher salt
  • 1/4 cup olive oil

For the Tzatziki Sauce:

  • 1 medium Persian cucumber, finely grated
  • 1/4 shallot, peeled and minced
  • 1 cup Greek yogurt
  • 1/2 lemon, juiced
  • 1/4 cup Italian parsley, minced
  • 1/4 cup fresh dill, minced
  • 1/4 cup fresh dill, minced

For the Tomato Salad:

  • 1/2 pint cherry tomatoes
  • 2 tablespoons Italian parsley, minced
  • 1 Persian cucumber, finely diced
  • 1/2 lemon, juiced
  • Kosher salt

To serve:

  • Pita
  • Lemons
  • Flaky sea salt
  • Red onion, thinly sliced
  • Dill

Directions:

  • 1. Bring the flank steak to room temperature, about 30 minutes.
  • 2. In a small bowl, mix the grated cucumber, shallot, Greek yogurt, lemon juice, herbs and a few pinches of salt to make the tzatziki sauce. Add salt to taste and set aside.
  • 3. In a separate bowl, toss the cherry tomatoes, Italian parsley, cucumber, lemon juice and a few pinches of salt to make the tomato salad.
  • 4. Once the flank steak reaches room temperature, sprinkle both sides with salt and coat in olive oil.
  • 5. Preheat the grill to high heat. When the grates are hot, add the flank steak and cook on one side for 5-6 minutes. Flip and cook for another 5-6 minutes or until the flank steak reaches your desired level of doneness (140° F for medium).
  • 6. Remove the flank steak from the grill and transfer to a cutting board. Rest for 10 minutes.

To Assemble & Serve:

  • 7. While the flank steak rests, warm your pitas.
  • 8. Slice the flank steak into strips by cutting against the grain.
  • 9. Assemble the gyros by adding tzatziki to the bottom of the pita. Add a spoonful of tomato salad, and then add sliced flank steak. Garnish with flaky sea salt, red onion, dill and lemon juice, to taste. Repeat with the remaining pita.
