- Kosher salt
- 1/4 cup olive oil
For the Tzatziki Sauce:
- 1 medium Persian cucumber, finely grated
- 1/4 shallot, peeled and minced
- 1 cup Greek yogurt
- 1/2 lemon, juiced
- 1/4 cup Italian parsley, minced
- 1/4 cup fresh dill, minced
- 1/4 cup fresh dill, minced
For the Tomato Salad:
- 1/2 pint cherry tomatoes
- 2 tablespoons Italian parsley, minced
- 1 Persian cucumber, finely diced
- 1/2 lemon, juiced
- Kosher salt
To serve:
- Pita
- Lemons
- Flaky sea salt
- Red onion, thinly sliced
- Dill
Directions:
- 1. Bring the flank steak to room temperature, about 30 minutes.
- 2. In a small bowl, mix the grated cucumber, shallot, Greek yogurt, lemon juice, herbs and a few pinches of salt to make the tzatziki sauce. Add salt to taste and set aside.
- 3. In a separate bowl, toss the cherry tomatoes, Italian parsley, cucumber, lemon juice and a few pinches of salt to make the tomato salad.
- 4. Once the flank steak reaches room temperature, sprinkle both sides with salt and coat in olive oil.
- 5. Preheat the grill to high heat. When the grates are hot, add the flank steak and cook on one side for 5-6 minutes. Flip and cook for another 5-6 minutes or until the flank steak reaches your desired level of doneness (140° F for medium).
- 6. Remove the flank steak from the grill and transfer to a cutting board. Rest for 10 minutes.
To Assemble & Serve:
- 7. While the flank steak rests, warm your pitas.
- 8. Slice the flank steak into strips by cutting against the grain.
- 9. Assemble the gyros by adding tzatziki to the bottom of the pita. Add a spoonful of tomato salad, and then add sliced flank steak. Garnish with flaky sea salt, red onion, dill and lemon juice, to taste. Repeat with the remaining pita.
