Gyro Bowl with Greek-Style Lamb Meatballs Recipe

Tip: you can prep the meatballs and homemade tzatziki sauce ahead of time so these gyro bowls can come together in a few minutes during the busy week!

Ingredients:

For the Meatballs:

  • 1 lb. New Zealand grass-fed ground lamb (Tip: look for the Taste Pure Nature Logo)
  • 1/4 cup almond flour
  • 1 egg
  • 1/3 cup red onion
  • 1/3 cup Kalamata olives, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1 teaspoon pepper
  • 1/2 teaspoon thyme
  • 1 teaspoon oregano
  • 1/2 teaspoon cumin
  • 2 tablespoons fresh dill

For homemade tzatziki:

  • 1/2 cup Greek yogurt, plain
  • 1 tablespoon avocado oil mayo
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh dill
  • 1/3 cup cucumber
  • 1 lemon, juiced
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon pepper
  • 1 garlic clove, minced

To serve:

  • 2 cups romaine, chopped
  • 1/4 cup banana peppers
  • 1/4 cup tomatoes
  • 1/4 cup red onions, pickled
  • 1/4 cup cucumber
  • Pita on the side

Directions:

  • 1. Preheat oven to 450° degrees.
  • 2. In a large bowl, combine the ground lamb, almond flour, egg, red onion, chopped Kalamata olives, garlic powder, salt, pepper, thyme, oregano, cumin and fresh dill. Mix well.
  • 3. Using your hands, roll the meatball mixture into 12-13 equal-sized balls. Place on baking sheet.
  • 4. Bake for 16 minutes, flipping halfway through. Remove meatballs from the oven and set aside.
  • 5. In a small bowl, prepare tzatziki sauce by combining the Greek yogurt, avocado oil mayo, olive oil, dill, cucumber, lemon juice, salt, pepper and minced garlic. Stir until thoroughly combined.

To assemble & serve:

  • 6. To assemble, add chopped romaine lettuce to a bowl and top with banana peppers, tomatoes, cucumber, pickled red onions, and meatballs.
  • 7. Add a dollop of homemade tzatziki and serve with pita on the side.
