Grass-fed Lamb Loin Chops with Cherry Glaze Recipe

Tender New Zealand grass-fed lamb loin chops are paired with a cherry glaze for the perfect sweet and savory combination in this recipe from Teresa. Serve with a salad and grilled vegetables for a quick and easy meal!  
 

Ingredients:

For the Lamb:

  • 3 New Zealand grass-fed lamb loin chops (Tip: look for the Taste Pure Nature Logo)
  • Sea salt
  • Black pepper

For the Glaze:

  • 1/2 cup cherries, pitted and halved
  • 1/2 cup vegetable broth
  • 1 tablespoon minced shallots
  • 1 tablespoon butter
  • 2 tablespoons aged balsamic vinegar
  • 2 cloves garlic, minced
  • Salt
  • Black pepper

To Serve:

  • Watercress salad
  • Grilled shallots

Directions:

For the Glaze:

  • 1. In a saucepan, combine cherries, broth, shallots, butter, balsamic vinegar, garlic, salt and pepper.
  • 2. Bring to a boil and lower heat to simmer for approximately 8 minutes, stirring occasionally.
  • 3. Remove from heat and set aside.

For the Lamb:

  • 4. Preheat grill or grill pan over medium heat.
  • 5. Season loin chops with salt and pepper on both sides. Place on grill and cook for 2 minutes on each side.
  • 6. Coat loin chops with cherry glaze and cook an additional 2 minutes. Reserve remaining glaze for serving.
  • 7. Remove from heat and let loin chops rest for 5 minutes.

To Serve:

  • 8. Drizzle remaining cherry glaze over loin chops. Serve with watercress salad and grilled shallots.
