- Freshly ground black pepper
- Kosher salt
For the Mayo:
- 1 1/2 teaspoon ground cumin
- 2 tablespoons mayo
- Kosher salt
For the Buns:
- 2 ciabatta or brioche rolls
- 2 thick slices of feta cheese
- Olive oil
- Red onion, thinly sliced
Directions:
For the Patties:
- 1. Pre-heat grill to 450-500 degrees.
- 2. Divide ground lamb in half. Form into two 8-ounce patties and create large divots in the center.
- 3. Season with kosher salt, freshly ground black pepper, and 1/2 teaspoon ground cumin per burger patty.
- 4. Grill about 4-5 minutes per side, or until burgers are done to your liking. Transfer to a cutting board.
- 5. Add feta cheese slices to the top of each patty and allow to rest for 5 minutes.
For the Mayo:
- 6. Mix mayo with ground cumin and a pinch of kosher salt. Set aside.
To assemble:
- 7. While burgers rest, toast the buns.
- 8. Spread the bottom half of each bun with half of the cumin mayo and place the burger patty with feta on top.
- 9. Sprinkle with more cracked black pepper, add red onions, a drizzle of olive oil and the top bun. Enjoy!
