Grass-fed Lamb Loin Chops with Cherry Glaze Recipe

Ingredients:
For the Lamb:
- 3 New Zealand grass-fed lamb loin chops (Tip: look for the Taste Pure Nature Logo)
- Sea salt
- Black pepper
For the Glaze:
- 1/2 cup cherries, pitted and halved
- 1/2 cup vegetable broth
- 1 tablespoon minced shallots
- 1 tablespoon butter
- 2 tablespoons aged balsamic vinegar
- 2 cloves garlic, minced
- Salt
- Black pepper
To Serve:
- Watercress salad
- Grilled shallots
Directions:
For the Glaze:
- 1. In a saucepan, combine cherries, broth, shallots, butter, balsamic vinegar, garlic, salt and pepper.
- 2. Bring to a boil and lower heat to simmer for approximately 8 minutes, stirring occasionally.
- 3. Remove from heat and set aside.
For the Lamb:
- 4. Preheat grill or grill pan over medium heat.
- 5. Season loin chops with salt and pepper on both sides. Place on grill and cook for 2 minutes on each side.
- 6. Coat loin chops with cherry glaze and cook an additional 2 minutes. Reserve remaining glaze for serving.
- 7. Remove from heat and let loin chops rest for 5 minutes.
To Serve:
- 8. Drizzle remaining cherry glaze over loin chops. Serve with watercress salad and grilled shallots.
