Ingredients:
For the Lamb:
- 1 lb. New Zealand grass-fed lamb steaks or lamb medallions (Tip: Look for the Taste Pure Nature logo)
- Salt
- Pepper
For the Marinade:
- 6 cloves garlic
- 4 sprigs fresh rosemary
- 1/3 cup extra virgin olive oil
- 2 tablespoon red wine vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
To Serve:
- Grilled pita wedges
- Olives
- Cucumber, sliced
- Tomatoes (cherry or grape)
- Roasted peppers
- Assorted cheeses
- Hummus
- Tzatziki
- Baba ghanoush
- Fresh mint leaves, for garnish
Directions:
For the Marinade:
- 1. Coarsely chop fresh rosemary. Peel and smash garlic cloves.
- 2. In a medium bowl, whisk together the chopped rosemary, smashed garlic, extra virgin olive oil, red wine vinegar, Dijon mustard, sugar, salt and black pepper.
- 3. Add marinade to large pan and place the lamb steaks in the pan to soak.
- 4. Cover the pan and refrigerate for at least 4 hours or overnight.
For the Lamb:
- 5. After marinating, season lamb with salt and pepper.
- 6. Grill the lamb over medium-high heat for about 6-8 minutes total until medium rare.
- 7. Rest the lamb for 5 minutes before thinly slicing.
To Assemble:
- 8. Arrange grilled pita wedges, olives, cucumber, tomatoes, roasted peppers, cheeses, hummus, tzatziki, baba ghanoush and sliced lamb on a large board or platter. Garnish with fresh mint leaves and serve immediately.
