Mediterranean Mezze Platter with Rosemary Garlic Grilled Lamb Recipe

Ingredients:

For the Lamb:

  • 1 lb. New Zealand grass-fed lamb steaks or lamb medallions (Tip: Look for the Taste Pure Nature logo)
  • Salt
  • Pepper

For the Marinade:

  • 6 cloves garlic
  • 4 sprigs fresh rosemary
  • 1/3 cup extra virgin olive oil
  • 2 tablespoon red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

To Serve:

  • Grilled pita wedges
  • Olives
  • Cucumber, sliced
  • Tomatoes (cherry or grape)
  • Roasted peppers
  • Assorted cheeses
  • Hummus
  • Tzatziki
  • Baba ghanoush
  • Fresh mint leaves, for garnish

Directions:

For the Marinade:

  • 1. Coarsely chop fresh rosemary. Peel and smash garlic cloves.
  • 2. In a medium bowl, whisk together the chopped rosemary, smashed garlic, extra virgin olive oil, red wine vinegar, Dijon mustard, sugar, salt and black pepper.
  • 3. Add marinade to large pan and place the lamb steaks in the pan to soak.
  • 4. Cover the pan and refrigerate for at least 4 hours or overnight.

For the Lamb:

  • 5. After marinating, season lamb with salt and pepper.
  • 6. Grill the lamb over medium-high heat for about 6-8 minutes total until medium rare.
  • 7. Rest the lamb for 5 minutes before thinly slicing.

To Assemble:

  • 8. Arrange grilled pita wedges, olives, cucumber, tomatoes, roasted peppers, cheeses, hummus, tzatziki, baba ghanoush and sliced lamb on a large board or platter. Garnish with fresh mint leaves and serve immediately.
