Grass-fed Beef Burgers with Blue Cheese, Bacon and Apple Slaw Recipe

Burger night just got even better with this easy grilled blue cheese burger recipe from Plays Well With Butter! These delicious grass-fed beef burger patties are studded with crumbled blue cheese and crispy bacon and topped with homemade creamy blue cheese sauce and a crunchy apple slaw.  

Tip: Just before placing the burgers on the grill, generously oil a wad of paper towels. Use grilling tongs to run the oiled paper towels over the grill grates to prevent the burgers from sticking to the grill.  

Ingredients:

For the Burger Patties

  • 1 lb. New Zealand grass-fed ground beef (Tip: look for the Taste Pure Nature Logo)
  • 6 oz center cut bacon
  • 1/2 cup blue cheese, crumbled
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • Salt
  • Black pepper

For the Blue Cheese Sauce:

  • 1/3 cup mayonnaise
  • 1/4 cup buttermilk
  • 1/2 cup blue cheese, crumbled
  • 1/4 fresh chives, finely chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Kosher salt
  • Black pepper

For the Apple Slaw:

  • 2 cups cabbage, finely shredded
  • 2 Granny Smith apples, cored and julienned
  • 1 small red onion, thinly sliced
  • 1 lemon, juiced
  • 1/2 teaspoon kosher salt
  • Black pepper
  • 2 tablespoons prepared blue cheese sauce

To Serve:

  • 4 burger buns, toasted

Directions:

For the Burger Patties:

  • 1. Preheat the grill or a grill pan to medium heat, about 450-500° F.
  • 2. Par-cook the bacon by adding the bacon to a skillet over medium heat on the stove. Cook 2-3 minutes per side, until the bacon begins to render but is not totally crispy. Remove from heat. Once cool enough to handle, finely chop into small pieces.
  • 3. In a medium bowl, combine the ground beef, chopped bacon, crumbled blue cheese, Worcestershire sauce and Dijon mustard. Season with salt and pepper, as desired, and use your hands to mix until just combined.
  • 4. Divide the burger mixture into 4 even portions, about 1/4 lb. each. Using your hands, form each portion into a 1-inch thick patty, pressing a small indent in the center of each patty to prevent the burgers from swelling on the grill.
  • 5. Place the formed blue cheese patties on a plate or a small baking sheet. Set aside.

For the Blue Cheese Sauce:

  • 6. To a medium bowl, add the mayonnaise and buttermilk. Whisk well to combine.
  • 7. Fold in the crumbled blue cheese, chives and garlic powder. Season with kosher salt and black pepper. Stir to combine, tasting and adjusting seasonings as desired and set aside.

For the Slaw:

  • 8. In a large bowl, combine the cabbage, apples and red onion. Add lemon juice and 2 tablespoons of prepared blue cheese sauce. Season with salt and pepper, as desired, and combine well.

To Prepare & Serve:

  • 9. Place the burger patties directly on oiled grill grates. Grill 3-5 minutes per side, keeping the grill lid closed as the burgers cook. Once cooked to desired doneness (about 3 minutes per side for medium), transfer the burger patties to a small baking sheet or plate and let rest for 2 minutes before serving.
  • 10. Serve burger patties on toasted buns with blue cheese sauce and apple slaw.
