New Zealand Grass-Fed Cheeseburgers with Secret Sauce Recipe

Our secret sauce makes this New Zealand grass-fed beef cheeseburger that extra bit tasty and satisfying! We used cheddar, but you can use a different cheese to change up the flavor. Try Camembert, Gruyere or fried haloumi. Blue cheese is an especially delicious match with grass-fed beef.
Ingredients:
For the Burgers:
- 1 1/3 lbs. New Zealand grass-fed ground beef (Tip: Look for the Taste Pure Nature Logo)
- ½ large onion, very finely chopped
- 1 clove garlic, crushed
- 1 egg, lightly beaten
- ½ cup dried breadcrumbs, soaked in milk
- ½ cup chives, finely chopped
- ½ cup parsley, finely chopped
- ½ cup grated cheese, your choice
- 2 tablespoons tomato paste
- 1 tablespoon oil
- Few drops Worcestershire
- 8 slices cheddar cheese
- Salt and pepper, to taste
For the Secret Sauce:
- ¾ cup mayonnaise
- 1 shallot, peeled and finely chopped
- 3 Gherkin or Cornichon pickles, finely chopped
- 1 clove garlic, finely chopped
- 1 ½ tablespoon Dijon mustard
- 1 tablespoon tomato paste
To Serve:
- 4-5 hamburger buns
- Lettuce leaves
- 1 red onion, thinly sliced
Directions:
For the Burgers:
- 1. Preheat the BBQ or frying pan to medium heat.
- 2. Place all the burger ingredients in a bowl, season with salt and pepper, form into patties, and refrigerate for 15 minutes.
- 3. Brush the patties with a little oil and cook for a few minutes until cooked on one side.
- 4. Turn the patties over, reduce the heat to medium-low and cook for another 8-10 minutes until cooked through.
- 5. Transfer the patties to a plate or oven tray and lay a slice or two of cheese on top of each one.
- 6. Place back on the BBQ or frying pan for a minute or two until the cheese starts to melt.
For the Secret Sauce:
- 7. Combine all ingredients and season with salt and pepper to taste
To Assemble & Serve:
- 8. Spread the bottom bun with a dollop of secret sauce, place a patty on top, add lettuce and red onions.
