Grilled Ribeye with Soba Noodles and Tsuyu Recipe

This Japanese-inspired recipe is perfect for a cozy night in with a loved one. New Zealand grass-fed grilled ribeye paired with soba noodles and a savory Tsuyu dipping sauce is sure to delight your tastebuds.

Tsuyu is a rich, concentrated sauce or stock commonly used in Japanese noodle dishes and can be found at your local Japanese supermarket, in the international foods aisle at your grocery store, or online.

We recommend marinating the ribeye in the fridge overnight.

Ingredients:

  • 1 lb. New Zealand grass-fed ribeye steak, 1-inch thick and trimmed of any fat (Tip: Look for the Taste Pure Nature Logo)

For the Marinade:

  • 2 tablespoons concentrated Tsuyu broth
  • 2 teaspoons freshly cracked black pepper

For the Dipping Sauce:

  • 2 tablespoons concentrated Tsuyu broth
  • 6 tablespoons water
  • 1-inch piece of ginger, grated

To Serve:

  • 2 bundles soba noodles
  • 1/2 green onion, sliced
  • Grated ginger (optional)

Directions:

  • 1. Place the steak on a deep plate or in a storage container. Pour the marinade ingredients over the steak and gently massage. Cover with plastic wrap and marinate in the fridge for at least 2 hours.
  • 2. Thirty minutes before cooking, remove the steak from the fridge and bring to room temperature.
  • 3. Once the steak is at room temperature, remove from the marinade and thoroughly pat dry with paper towel.
  • 4. Heat up a grill or a heavy-bottomed pan on the stovetop with a few drops of oil.
  • 5. Place the steak on the hottest part of the grill or in the pan. Sear each side for 3-4 minutes, or until it turns dark brown. Move the steak to a cooler part of the grill (reduce to medium heat if using a pan on the stove) and cook until it reaches your desired level of doneness (another 1-2 minutes for medium rare or another 2-4 minutes for medium). Remove the steak from heat and let rest for 10 minutes.
  • 6. While the steak rests, prepare the soba noodles according to package instructions. Once done, rinse the noodles with tap water to stop cooking, then drain. Distribute the noodles between two bowls.

To Assemble and Serve:

  • 7. Prepare the dipping sauce by diluting the Tsuyu broth with water, or according to package instructions. Add the grated ginger, if desired.
  • 8. Slice the steak and divide between the two bowls of noodles. Serve warm with the dipping sauce and garnish with green onion and additional grated ginger on the side, if desired.
