Grass-fed Beef Satay Recipe

Bring the flavors of Thailand into your home in under 30 minutes with this mouthwatering beef satay recipe using New Zealand grass-fed beef. The creamy dipping sauce adds just the right amount of spice and extra flavor.

Ingredients:

For the Beef:

  • 10 oz New Zealand grass-fed flat iron steak (Tip: Look for the Taste Pure Nature logo) 
  • 15 skewers, soaked in water for 30 minutes  
  • Vegetable oil 
  • 1/4 cup coconut milk 
  • 2 teaspoons fish sauce 
  • 1 teaspoon dark soy, or regular soy sauce 
  • 1 teaspoon rice wine vinegar 
  • 2 teaspoons brown sugar 
  • 1 teaspoon curry powder 
  • 2 teaspoons minced ginger 

For the Sauce:

  • 1 cup coconut milk, separated 
  • 1 1/2 tablespoons red curry paste 
  • 1/2 cup crushed peanuts 
  • 1 1/2 tablespoons brown sugar 
  • 1 teaspoon fish sauce (or 1/2 teaspoons salt) 
  • 2 teaspoons rice vinegar 

To Serve:

  • Chopped cilantro for garnish (optional) 

Directions:

For the Beef:

  • 1. Slice the steak into strips, approximately 2”x1” and place in a large bowl. Set aside.
  • 2. In a small bowl, combine the coconut milk, fish sauce, soy sauce, red wine vinegar, brown sugar, curry powder, and ginger.
  • 3. Pour the marinade over the beef and mix until evenly coated. Let marinate for 30 minutes. 
  • 4. Thread 2-3 pieces of marinated beef onto each skewer.
  • 5. Heat a grill on high or heat the oil in a heavy bottomed pan over high heat.
  • 6. Sear the skewers until both sides turn dark brown and the inside is medium rare, about 2 minutes per side. If you prefer your beef more well done, cook the skewers for another 2 minutes over medium heat (or on the low heat side of the grill).

For the Sauce:

  • 7. In a saucepan, heat 1/4 cup coconut milk over medium heat. Add the curry paste and simmer in the coconut milk until fragrant, about 2 minutes.
  • 8. Add the remaining coconut milk, peanuts, sugar, fish sauce, and vinegar, and stir to combine. Simmer over medium-low heat until the sauce has thickened, about 5 minutes. Remove from heat and set aside. 

To Serve:

  • 9. Garnish the skewers with cilantro, if desired. Serve hot with the dipping sauce.
