Breakfast Burrito with New Zealand Grass-fed Beef Recipe

Looking for a new way to satisfy your morning cravings? Look no further than this delicious, protein packed breakfast burrito made with New Zealand grass-fed beef. Sliced sirloin steak sits lovingly alongside bell peppers, mushrooms, avocados, and feta. We’ve also added a little chili powder and paprika for an extra kick.

Ingredients:

For the Beef:

  • 2/3 - 1 lb. New Zealand grass-fed sirloin steak (Tip: Look for the Taste Pure Nature Logo)
  • 2 tablespoons olive oil
  • 1/2 onion, finely chopped
  • 1 red bell pepper, sliced lengthwise
  • 4 large mushrooms, sliced
  • 1 tomato, finely chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 - 1 teaspoon chili powder
  • Salt and pepper, to taste

For the Scrambled Eggs:

  • 8 eggs
  • 1/2 cup milk
  • Salt and pepper, to taste

To Serve:

  • 4 large tortillas
  • 1 cup spinach
  • 1.5 oz Feta
  • 1/4 cup cilantro
  • 1 avocado
  • Lime wedge
  • Hot sauce, optional

Directions:

For the Beef:

  • 1. Rub steaks with a little oil and season with salt and pepper before adding to a hot pan.
  • 2. Cook until medium rare (approximately 2 minutes each side). Remove from pan and cover loosely with tinfoil to rest.
  • 3. Reduce heat of pan to medium and add a splash of oil. Add onion and cook for 1 minute before adding red bell pepper and mushroom and cook for an additional 1 minute.
  • 4. Add cumin, paprika and chili powder and stir through.
  • 5. When veggies are tender (about 2 minutes) add tomato and cook until soft. Season with salt and pepper to taste.

For the Scrambled Eggs:

  • 6. Whisk eggs, milk and salt and pepper in a large bowl.
  • 7. Bring pan to medium heat and add a dash of oil.
  • 8. Pour the egg mixture into the pan and continue cooking, lifting and folding the eggs until thickened and no visible liquid egg remains. Do not stir constantly.

To Serve:

  • 9. Lay tortillas on a flat surface or plate.
  • 10. In the center of the tortilla, add cooked veggies, topped with thinly sliced beef. Add a handful of spinach, scrambled egg, crumbled feta, cilantro, and avocado. Fold the bottom of the tortilla, and roll.
  • 11. We like to serve with lime wedges and hot sauce to taste.
